Super Easy Oven Baked Cod and Shrimp

Last Friday, I got some cod fillets and shrimp out of freezer to thraw, but we ended up going out for dinner. After we came back, when baby Therese’s playing on her play mat, I quickly prepared this super easy and yummy dish into oven as I don’t want to waste the food. After I finished the night routine for Therese and put her in her crib (she fell asleep very soon by her own), the food is ready!

What you need:

  1. coconut oil
  2. cod fillets (wild-caught)
  3. shrimp, peeled and deveined
  4. black pepper
  5. salt
  6. lemon
  7. garlic, paparika, oregano, cumin (optional)

 

How to make it:

  1. Preheat the oven to 350 °. In microwave oven, melt the coconut oil (I did 30 seconds twice). Mix it with the rest of the ingredients you have (black pepper, salt, juice from the lemon, garlic*, paparika*, oregano*, cumin*)
  2. Place the cod on the aluminum foil. Put the shrimp (2 or 3 depend on the size of the cod) on the top of each cod fillet. Spread the mix over the cod and shrimp. Place some lemon slices on the top.
  3. Bake for about 20-30 minutes

We have a Oster Countertop Convection Oven, gift from my in-laws. It’s super convenient and easy to use.
