Today, I’m going to share with you guys a super easy instant pot comforting chicken bok choy congee recipe. We introduced it to baby Therese when she’s 8 months old and she loves it! We cooked a pot when we hosted a Bible Study last month. Our friends loved it and asked us about the recipe. It’s really easy to make!
What you need:
- Jasmine rice, about 3/4 cup – 1 cup
- Cold water, 7-9 cups
- Chicken drumsticks, 5-6
- Ginger, 3-5 slices
- Shanghai Bok Choy, 2-4
- Salt
- White pepper (optional)
- Green onions (optional)
How to make it:

- Rinse rice under cold water, scrub the rice in a circling motion. Pour out the water, and continue to rinse several times. *We use a rice washing bowl.
- Add chicken drumsticks, ginger and the cold water into the pot.
- High pressure for 30 minutes + Natural Release (about 40 minutes) in Instant Pot.
- Use tongs and/ or forks, chopsticks to remove the chicken bones and skin if you want
- Add chopped bok choy in the pot. Press Sauté button on Instant Pot and stir until desired thickness & consistency
- Add salt (and white pepper) as desired
- Serve immediately with chopped green onions on the top
