Baby’s First Birthday Meal

Time flies, Therese turned one this week! I’m so glad that her birthday cake I made that day was a success and she loves the noodles I made for her lunch——it’s the Chinese tradition to eat noodles on birthday 🙂

Breakfast:

Lunch:

  • Tomato egg spinach noodles (this simple and easy dish tastes so good!)
    • peel off the skin of the tomato (cut a cross on the top of tomato and place them in boiling/hot water, then pull the skin off when cool enough to touch) and cut them in small chunks
    • beat the egg
    • add walnut oil (https://amzn.to/2wBvir6) in the heated pan
    • add tomato in the pan until the tomato is a little mushy
    • add little amount of water in the pan
    • pour the egg over the tomato
    • add cut unsalted noodles(Hakubaku Baby Safe Udon Noodles: https://amzn.to/2PVaJfP) *you can also make another pot to do the noodles seperatedly
    • (optional) add spinach or bok choy
    • close the lid and cook for about 5 minutes (make sure you have enough water there)
  • strawberries and banana

Dinner:

  • Fruit yoghort cake
    • mix 30g orange juice and 7g lemon juice together
    • add 30g walnut oil (https://amzn.to/2wBvir6) to the mixed juice
    • add 60g cake flour/gluten-free flour (https://amzn.to/2VR48XA) with a strainer
    • add 3 egg yolks to the mix and stir the batter
    • add a few drops of lemon juice to room temperature egg whites (3 eggs), with a hand mixer on high-speed (8 for 4-5 minutes), beat until stiff peaks form
    • using a spatula, gently fold 1/3 of egg whites into the batter
    • pour the batter to the rest of egg whites and use the spatula to combine them
    • preheat the oven to 300-325 F
    • pour the batter into the prepared pan
    • bake for about 50 minutes (cake will be a light golden brown when done baking)
    • remove cakes from oven and allow to cool (upside down)
    • use a round cup (opening side) to “cut” the cake to two little round mini cakes
    • cut off the top part of the mini cakes as it’s a little bit hard for baby to eat
    • cover the cake with baby yoghort as the cream (https://amzn.to/32XwKAd)
    • (optional) add some fruits between two mini cakes
    • add fruits on the top of the cake and around the cake (I cut the straberry to pieces and the candle can be inserted easily)

I also tried another recipe to make pumpkin/squash baby cake, but ended making waffles for Therese (in frezzer). She enjoyed the waffles this morning!
